About This Knife

Regarding the design inspiration of this knife, designer Tomoyuki Nemoto said, 
"中華包丁兼鉈です。向こうの田舎の人が、中華包丁だけで柵作りとか野外作業やってるのを見て、鉈に寄せてデザインしました。(This is a tool that combines a Chinese cleaver and a wood-chopping knife. I saw people in the countryside using only a Chinese cleaver for tasks like building fences and outdoor work, so I designed it closer to a wood-chopping knife.)"

Nowadays, you can easily find the prototype of this knife in a Chinese kitchen, the same wide, thick, and heavy Chinese cleaver. You will also see Chinese people effortlessly and skillfully using this knife to cut vegetables or meat, as if it were just a paper fan. Don't be surprised; the reason it has been passed down for thousands of years in Chinese history is precisely due to its formidable destructive power.

The birth of the Chinese cleaver can be traced back to ancient agricultural times—a time of survival. People relied on it to chop wood, maintain fire, build fences to fend off wild beasts; at the same time, after capturing prey, it could help humans easily handle whole large animals, chop bones and meat, maximizing the use of hard-earned protein sources. The Chinese cleaver, with its heaviness, durability, and destructive power, met almost all the needs of ancient Chinese people for survival tools.
